「海瑞扛丸」的创始人,同时也是新竹最早开始有记载经营扛丸制作的黄海瑞先生,18岁开始便在南门市场创业并经营面摊,并选用台湾黑毛猪的后腿肉来制作扛丸,所以口感特别有弹性,老ー辈的新竹人,吃面的时候如果能加上一颗扛丸,就是非常奢侈的消费了,也因为这样大家口耳相传,常常念著:「走,来去海瑞那里吃扛丸面」于是,海瑞面摊的扛丸便开始知名了起来,因品质良好,树立口碑声名远播。
